Mother's Day- Plus my Cheese Tart and Butter Cookies Recipe

This year, for Mother's Day, we had to think of what to do for each of our mothers. We decided that we would do something with our hands, instead of just go out for a meal.

Mummy Yeo
On Friday, JJ and I were due for our HDB First Appointment so I decided to take a full day of leave. After the HDB Appointment and some shopping at Soon Lee, we went home to prepare our 3 course dinner for mummy (and the family). Credits go to JJ, he really impressed us with his innovative 2 courses while I prepared the dessert.

Pan Seared Scallops on a Medley of Fruits

Seabass on Duo Mashed Potatoes (Sweet and Russel) 

And my Mini Cheese Tart

Here's the recipe for the mini cheese tart:
Ingredients
3/4 cup cracker crumbs (about 7 crackers)
1 tablespoon brown sugar
3 tablespoons unsalted butter (melted)
1 pack cream cheese (melted)
1/2 cup icing sugar 
1/2 cup normal sugar
1/4 cup sour cream
3 eggs
1 teaspoon vanilla extract
3 tablespoons lemon juice
Blueberries and Raspberries to garnish


Method
1. Pre heat oven at 175deg
2. Place baking cups in cupcake tins
Crust
3. Combine and stir the crackers, brown sugar, melted butter
4. Press mixture into baking cups
5. Freeze crust
Filling
6. Stir cream cheese until smooth
7. Add granulated sugar and mix
8. Add sour cream and mix
9. Add 1 egg at a time
10. Add vanilla extract and lemon juice
11. Fill chilled baking cups with cheesecake mixture
12. Bake for 20-22 minutes
13. Let it cool before garnish

Brought some of the tarts to church for YAG, and had some good reviews too!


Mummy Loh
Then for Mummy Loh, we celebrated at popo's house, where I baked butter cookies for the three mothers- Mummy, Xiaoyee and of course popo. I have baked butter cookies many times, but this has been the BEST THUS FAR!

Ingredients
225gm unsalted butter
3/4 cup granulated sugar
1/4 teaspoon salt
11/2 teaspoons pure vanilla extract
1 large egg yolk
2 cups all purpose flour

Method
1. Beat butter, sugar, salt and vanilla together until smooth
2. Mix egg yolk into batter
3. Add flour and mix
4. Knead dough
5. Refrigerate dough
6. Preheat over to 163deg
7. Place dough (thin is nicer) on baking tray lined with parchment paper
8. Bake for 16-18mins

And tadah.. Happy mothers with their cookies. Brought some to PMC too, and good reviews!

Butter Cake Recipe

Noting the successful recipes so that I can always remake them. Nobody would have believed in the past that I would take to baking, but I really love how people enjoy the products I bake.

Made this butter cake for grandma's birthday, and everyone loved it!

Ingredients
- 250gm Unsalted Butter
- 4 Eggs (Separate Yolk and White)
- 200gm Sugar
- 200gm Self Raising Flour
- 60ml Milk

Method
1. Pre-heat oven at 170deg before starting to prepare

2. Egg White Mixture
2a. Mix 50gm sugar with egg white
2b. Beat until mixture peaks

3. Butter Mixture
3a. Beat butter with 150gm sugar until creamy
3b. Add egg yolks
3c. Add milk
3d. Add self raising flour

4 Fold egg white mixture into butter mixture (make sure cannot see egg white)
5 Put in 8inch baking tin
6 Bake for about 45mins at 170deg
7. Poke with wooden chopstick to make sure it is cooked

Do not have a nice photo of the cake- this was the only one I took.


Everybody loved the cake! It wasn't too sweet, and it was SO MOIST! Yummy! Going to upload the recipe of my cheese tart and butter cookies in the next post!
